A variety of apples, harvested by hand. These apples come from a single orchard which made up of soil on ancient reef limestone, with oolites from the Jurassic period. The first fermentation occurs naturally in stainless steel tanks. The second fermentation then occurs in bottle to form a fine bead. These are not disgorged.
This is a very special cidre that is all about elegance and finesse. Here you will find extra layers of detail and complexity. Golden colour, but clear. Darker than Les Silex. Red apples with hints of toffee. Very fine bubbles, gentle on the palate. Smooth, super tasty, and very easy to drink. The sweetness is balanced. Very clean on nose and palate.
