From a single variety of pear called 'Plant de Blanc'. These pears come from Antoine's friend's orchard in neighbouring commune Domfront, and are collected by hand. They are old trees which grow on clay and shale. The first fermentation occurs naturally in stainless steel tanks. The second fermentation then occurs in bottle to form a fine bead. These are not disgorged.
Lightish colour. Much the same as 18, except a bit more expressive and slightly more youthful. Crisp, fine bubbles. Less austerity and more sweetness than 18, but still dry. No real bitter notes. This makes for easy drinking – as an aperitif, with salty snacks, or after dinner. If you prefer slightly drier, go for 18. And if you prefer a touch more sweetness (not much), then go for 19.
