A brandy from Cider! Eau de Vie de Cidre made after double distilling cider, it sees no oak making it clear, Double (distilled) Zero (years in oak)....WHAT? Cellaring the apples for several months after ripening to concentrate the sugars the apples are then left to ferment before being racked and left on lees for 10 months before distilling, over 30 varieties of apples including bitter & bitter-sweet (70%), sweet (20%), and sour (10%). Surprisingly complex, notes of green apples, vanilla, candied almonds and hops abound. Slip this one neat, over ice or mix it with a little lime and sugar. Sitting at 50% she packs a punch, but a fun delicious punch at that!
