Breathtakingly delicate, hydrating and delicious apple cider from the Sierra Nevada in the far south of Spain.
Fuente Guijarro is a tiny, micro cidery located all the way up at 2000 masl and on a clear day you can see all the way to Africa from the verandah of the house.
Here the winters and nights are bone chilling and the days are warm an exceptionally lumjnous.
Roughly ten varieties of very rare and ancient cider apple, endemic to Andalucia, are grown to make this cider…two of which were literally down to just one tree each left on earth.
The fruit is picked from late September and every apple is washed three times in source water before being split and pipped by hand.
It is then crushed and fermented in stainless steel. The resulting ciders are incredibly delicate…almost ethereal and are some of the most striking and compelling fermented drinks we’ve ever tasted.
