Tim Webber and Monique Millton are two of Australia's most thoughtful and diligent farmers, drawing on generational farming know-how and visceral experience are evolving the conversation around holistic farming and applying an Australian context to biodynamics. Their remarkable property in Forest Range, Adelaide Hills, set amongst variegrated slopes and fringed by native bush is a cornucopia of wildlife, varied soils and is exemplar of a regenerative practice.
Picturesque, yes, but deeply invested in soil, plant and animal health more so, this is one very incredible place to be growing food and nurturing vines for wines. The wines themselves, imbued with personality, are lively in their sense of freshness and purity, delicious, refreshing and, as odd as it sounds, nourishing.

We'll taste around eight and chat through the principles of bio-dynamic farming and gentle wine-making techniques.
