Gochujang is a fundamental ingredient of Korean cooking. A mixture of chilli powder, glutinous rice, rice syrup and aged sea salt is combined with meju, the Korean equivalent to koji, added and fermented & aged for months in a traditional Korean vessel known as onggi. The result is this deeply savoury, spicy & sweet paste that is a staple of the Korean pantry.
This Gochujang is unique, being made in house by chef Eun in Australia in a very traditional way only using the very best ingredients imported from Korea by our friends at Table 181.
