Rough Rice Delicata Squash, Fennel + Basmati Koji

This was a combination of chance whereby I made koji from some aged basmati rice I had hanging around. The koji ripened just as I received a vegetable delivery from my friend Alex Taylor from Cygnet. I simply roasted the delicata and fennel in the wood oven then combined with the koji + salt. After fermentation I added some spices and a little garlic oil. It’s pretty complex and has pronounced sweetness, funk and depth. It’s a relatively new one to the arsenal but has a lovely smooth texture and I’ve been really enjoying it with roasted pumpkin for a double whammy but also very delicious added at the last minute to a vegetable curry. Adam James
