A super-limited release of a naturally evaporated Apera I’ve been working on. Instead of giving them a year (because they are usually multi vintages), I’ve been giving them a number. This is our fourth Apera since 2011. No. 4 is about 50/50 chenin blanc and riesling from Vine Vale in the eastern Barossa, nestled up against the Barossa Ranges. Over a period of four years, the base wine slowly evaporated with the help of flor in its early evolution until we got to about 15.5% alc. From then on they were no longer able to survive, and we were left with a wine that is super stable at just under 17% alc. Pretty exciting. Just grape juice from a special place in time.
