The majority of the wines that we drink everyday are sessionable favourites with low alcohol levels and masses of acidity. Every now and then, one really must go towards the other end of the scale. In other words, having a wine that should be studied and left open to breathe. This chardonnay is definitely one of them! The whole wine is straight pressed to barrel, with one-third of the wine being in new french oak. The wine is left for ten months in oak to really develop texture and complexity. Therefore we are left with rich honey dew and citrus aromas, with an undertone of mealy oak. What’s good about this wine is the palate, which has rich chardonnay flavours met with intense acidity. What a pleasure of a wine, that can be drunk over a few days.
