The fruit was handpicked on 11th October at 17brix. The bunches were gently hand destemmed to keep the whole berries intact. The berries were open fermented on their skins for 10 days with a gentle plunging by hand three times a day. The fermenter was emptied into the basket press where it was pressed very hard and the juice transferred to kvevri. The wine received a small addition of 20ppm of sulphites in Spring and remained on full solids for 9 months before it was bottled without filtering or fining.
Super pale cherry red with copper hue. Strawberry jam ripe red fruit, rhubarb, cold ash. Very fresh. Nice palate of wild strawberry with white cherry and watermelon. Very light. Really nice. - Tim Stock, Importer
