The V2 pinot noir comes from the older vines in the vineyard. It was fermented with 80% whole bunches, and 20% destemmed fruit. This method of fermentation produced a wine with a bit more structure and tannin, but at the same time remaining very lively and fresh. Opens up and develops nicely with some air. Aged for one year in old French oak barriques, and then one year in bottle before release.
