The ‘chilli vinegar’ is comprised of fermented chilli, fermented slippery jacks + green tomatoes, plus both quince and apple vinegars that has now had six months aging in a whiskey barrel. The vinegar has developed a lovely harmony of spice and acidity with a hint of smoke from the barrel.  Use as you would a hot sauce, particularly good w oysters and Bloody Marys. - Adam James
