An ode to my time in Russia as a teenager. Made in a similar way to the mothership. This ferment has been ticking over for over 6 years now. Made up of all organic beetroot, turnip, red cabbage + carrot with added caraway, dill and nigella seeds for fragrance. Itʼs vibrant, earthy and tart. I like to serve it brushed on seared venison or wallaby, but itʼs equally great drizzled over roasted vegetables, added to sauteed greens, or used to enrichen braises or soups for complexity. Mix 50/50 with Greek yoghurt for a wonderfully bright creamy/tart dressing to next level your next potato salad. - Adam James, Rough Rice
