This six year old blackbean ferment has been allowed to sour and has been hit with star anise, clove, dried chilli and Sichuan pepper to recreate some of the flavours of Chengdu. It has then been pureed w a chilli/garlic oil to a thickish paste. It actually reminds me of a punchy olive tapenade (the salt and the sour) and I tend to use it as such. Great stirred though noodles, a lick on a sandwich, also lends itself to adding complexity to Sichuan style broths and soups. Adam James
