Rough Rice Fermented Black Garlic + Douchi

A bit of an ode to my time in Sichuan Province where I first really fell in love with douche (fermented black beans). Here Iʼve used black turtle beans replacing the traditional black soy beans and once fermented to umami deliciousness, blended them with local organic garlic I slowly blackened (maillard reaction) then finished with local organic canola oil and green Sichuan peppercorns. The result is complex, umami, zesty, sweetness. Excellent folded through fresh noodles, topping steamed fish or dressing tomatoes. - Adam James, Rough Rice
