This was an experiment which I’m really quite happy with. Taking a Chinese approach to soy sauce but adding local organic toasted buckwheat and hemp seed in place of the traditional toasted wheat. It’s had 6 moths in my big Sichuan style douban crock outside and is stirred daily. It’s developed a lovely nuttiness from the hemp seed and has buckets of umami + fair wack of funk. Use in place of regular soy. Adam James
