Tasmanian yuzu zest, fermented chilli powder + Tasman sea salt. Yuzu is still very much a novelty here in Tasmania and I’m so excited to now have a regular (seasonal) source. Yuzu salt is popular around parts of Japan but with the addition of the fermented chilli its more reminiscent of Thailand/SE Asia. Really very versatile as a finishing salt; it’s great w meats, seafood and vegetables alike but comes into its own sprinkled on acidic fruit. Green mango if you’ve got access to it or if you’re closer to home then a crunchy granny smith works a treat. *Drizzle of good honey optional. Adam James
