Saison is a small batch handmade vermouth that celebrates the bounty of each season. We are proudly made in Melbourne by chef turned aperitif nerd Dave Verheul.
This is a new one for me and it has taken a little longer than expected to age this one through but that extra time has resulted in a vermouth with an incredibly long and complex bitterness. Reminiscent of a love child between a bay leaf, walnut and wormwood bush. For the 2021 Black Walnut I have used organically grown unripe walnuts and their leaves, dried cumquat, chamomile and heavily roasted barley koji. As with all of our vermouths there is no caramel and no spice added and once again this vermouth is balanced out using two kinds of Australian grown wormwood. - Dave Verheul
