Pantom Changing 2019
Semillon and chardonnay juice from Vine Vale in Barossa combined with a solid slosh of skinsy Magpie Spring sauvignon blanc kicked things off. It needed something more, so they added leftover skins and stems from Lucy M Wildman sauvignon blanc. Hey presto! Changing arrived. Its wild and tropical with a zingy edge. You never know what it will give you first, so take this changeling for a ride.
Pantom Tribute 2019
Fruit from 100+ year old Vine Vale grenache was pressed and the wine was fortified using distilled piquette, made from skin of the same grapes. It was made to honour the first wine pioneers in the area, all dedicated to fortified wines. Probably the most collaborative wine in the mix, it was made at Lucy Margaux and then aged at Shobbrook in 150yr old 100l barrels. The barrels were left to their own devices and not topped up – resulting in a fittingly complex nuts and prune vibe. If you’ve never tried fortified grenache, this is the one you’ve been waiting for.
Pantom Jet Lag 2019
When Gianfranco arrived in Australia, he was pretty much awake for eight days solid. The jet lag was real…real bad. His one moment’s respite on a barrel is now immortalised by this wine. Rose was the answer, grenache rose. Though fermentating grenache rose can tricksome, Pantom (Panevino + Anton of Lucy M + Tom Shobbrook) coaxed it towards bubbles with the addition of a little local cherry juice, as liqueur de tirage. Think of this as a pink cure all – jet lag, general malaise, this baby can turn your frown upside down.
Pantom Merlo Grigio 2019
Equal parts merlot to pinot grigio create this light-footed bright red. Drink with a light chill, share with your mum, your cat or yourself. Though the blend isn’t often seen, its deeply respected by those who believe. Much like Gianfranco’s greatest influences - Bob Dylan & Jesus.
