This is probably the most hydrating and nourishing alcohol we’ve ever tasted. This is one of the finest, most pure and most delicate drinks we’ve ever had... let alone ciders. It’s farmed and bottled in the high (2000masl) in the Sierra Nevada by incredible perfections and conservations Manual Moreno and Bertani.
There are roughly ten different varieties of ancient cider apples, endemic to the Sierra Nevada, that go in to this cider and Manuel has been officially responsible for rescuing two of them from extinction. The fruit for this cider is picked at night so as to have a lesser yeast population on each apple. The fruit is then split by hand and pipped by hand. This creates a cider really quite ethereal in flavour and structure and something so profoundly delicious it seems quite magical.

2018 Jordi Llorens Blan 5-7 Macabeo / Parellada
Incredibly delicious, savoury white wine!!
Jordi Llorens is one of the most exciting young wine makers and farmers in Catalonia and his vineyards grow on seriously exceptional terroir. The limestone here, just west of Barcelona, producers extraordinary wines with lots of flavour and incredible drinkability.
Blan 5-7 is a blend of macabeo and parellada and it is wonderful, wonderful fun to to drink. It’s lightly macerated on skins so the texture is nice and chalky. The acidity is really bright too, making this an amazing wine for all seasons - with or without food.
2018 Manon Forest White

2018 Bodegas Cueva Orange Macabeo / Tardana
"Super fresh and pure" says Campbell, and as per usual of course he's right. From local Valencian varietals macadeo and tardana this wine is equal parts intense and powerful, fresh and voluminous. 2016 Benoit Camus Vagabond Gamay
Gamay. Straight up. Hello. Strong limestone soils from a wild person who turns deadly serious in the winery. The farm is 30 kilometres south of Lyon. Raised in concrete.
Fragrant, super floral and almost herbaceous elements in the bouquet. Chamomile? Jasmine? Cherries? Magnificent. Crisp and lightly juicy to taste, dances on the palate, so clean and vibrant, succulent, near sour cherry character, a touch of game meatiness and a long, savoury, almost faintly earthy finish. 2016 Simon Busser Polichinel Malbec
The Polichinel from Simon Busser is made entirely with Malbec and is an excellent example of how mineral and refreshing the grape can be when grown in this terroir. Simon's vineyard has lots of silica and sandy, free draining soils and the resultant wines have a very distinct freshness. Simon is one of the great farmers of South-West France. - Campbell Burton
