Dr Edge Tasmania pinot noir is a blend of Derwent Valley (80%) and Tamar Valley (20%) fruit. All manner of whole cluster inclusion, hand stomp, foot stomp and bum stomp maceration occurs across each parcel before blending to the Dr's house style.
Josh Cooper Spring Pinot Noir Blend 2022
Produced from a fantastic vintage for pinot noir, 65% Doug’s Vineyard and 35% Ray-Monde. The best pinot noir blend to date. Perfectly ripe vibrant fruit as well as the complexity these sites innately deliver.
A lovely mix of delicate red berries, rose and spice from Doug’s Vineyard and the dark, guttural depth of Ray-Monde. A fantastic introduction to the style of my pinot wines and while approachable and delicious right now, it is destined to age well over the medium term. - Josh Cooper
Les Fruits Atmosphere Pinot Noir 2021
A fortunae parcel of 2 tonnes of 114 and 115 clones from the Anderson vineyard high up on the first ridge of the Hills at Ashton. The mainly hill facing amphitheatre is protected just enough from the weather than butts the front of the hills just hundreds of metres away, but the high altitude ensures a vibrant red fruited expression. Strangely, for me, 100% destemmed in my largest 2500L jarrah fermenter. Lightly cloudy cherry red. Pretty fragrant nose with peony florals, fresh raspberry and dried strawberries plus a little earthy spice. Sour red fruits burst forward with elevated acidity driving the tartness thanks to a littel VA adding a touch of cherry pickle juice to those already vibrant red fruit flavours. Tannins are present but fairly background to the acidity in structural terms. This should start to settle nicely in the bottle over the short term but will remain highly toned thanks to the abundance of acidity.
