From Totness in South Australia and not to be confused with the Devon town of Totnes in the UK. Not at all. Carbonic maceration for just under a week, then off to ceramic eggs, amphora, barrels. The vineyard is 25 years old and sits on black sandy soil and schist. Nice.
Pickled cherries, sweet spice, undergrowth and sage, some earthiness and fennel. A jostle of character. Bustles in the palate, zesty with its amaro-like tang and feathery in texture. Juicy but lean, which is a thing. A lightning bolt of gamay. Light and fresh. - The Wine Front
