Wow, the first time I tasted this was several months ago and I've been gasping for more ever since. It's a 50 / 50 blend of pinot gris and pinot noir........pinot noir juice and whole berries of gris. This style of fermentation creates a really more-ish, slightly chalky and very fine tannin structure. It's basically made for drinking in the sun on a nice day, but the super fine tannins also lend it very nicely to a grain salad and plate of ricotta.
