Josephine ‘Jo’ Perry spent seven years managing two wineries in Spain and now runs her own micro-winery in Margaret River making wines from biodynamic and organic grapes.
This dry, savoury rosé is made from 100% Tempranillo grapes is a straight nod to the time Jo spent in Spain. It’s Hand harvested with a small portion of whole bunch pressed and a light crush to catch some colour and light spice. A combo of barrel ferment, amphora & chilly tank to keep freshness yet build texture.
Minimal fuss this wine was racked once the fermentation had finished, the portions blended and bottled. Hey presto!
