Named after an ancient Chinese rose variety, the Mutabilis is a deeply flavoured Piemonte rosato. Its made on the Matunei farm by the Terre di Cardona society. The society/collective connects farms across Piedmont, creating a space where people share their land, machinery and knowledge. Members must work in harmony with the environment, respecting people and local biodiversity. In previous years the Mutabilis has been a blend of nebbiolo, barbera and freisa but the 2019 is 100% freisa. Its distinctive savoury focus has hints of maraschino cherry and blood orange. There's a nice lick of tannic grip and a pulsing wild undercurrent. Seriously good!
