Chicago’s first distillery to open since the mid 1800s, Koval does things a little differently, their modus operandi is grain-to-bottle using only organic grain, grown by local farmers, to make their base spirit from scratch and barrels using wood from organically grown trees.
Oat, malted barley, rye and wheat are used to make this original 4 grain whisky. Wonderfully complex layers, starting out sweet and creamy with notes of banana, cereal grains and fresh oak. Leading into fruit cake, dried fig and chocolate coated liquorice, concluding long with peppery spice.
