This is another little treat coming from the monastery in Lazio. Similar in varietal components to its little sister suore coenobium, but instead it is left on skins for 16 days leading to a greater intensity within the wine. Tastes like dried pears, sage and hazelnuts are forever present, but what is most notable is the grip of tannin that continually nips at your gums as if it was a red wine. It's drying effect and overall intensity makes you want to continually go back for more. Solid orange wine.
