Damien Bastian has climbed the rungs of Savoie's superstar winemakers quickly with learning done between Jean-François Ganevat in the Jura and celebrated chasselas producer Dominique Lucas (Les Vignes du Paradis). This is his very sought after orange wine that sees chasselas grapes macerated for an extended period of time, then pressed to old wood for maturation. Ultra fragrant, redolent of dried, mixed citrus peel, dried apple, sweet mustard, lemon verbena and alpine herbs. Texture is chewy, firm but super refreshing, with a belt of saline acidity through the core. Outstanding stuff.
