This wine is made from non-estate vineyards that vigneron Joe Holyman sources from to expand into this, his non-sulphur, ultra minimal intervention range. This one is fermented on skins in small amphora. It’s chewy and spicy, herbal and refreshing, full of character and straight up interesting and delicious. Scents of pawpaw, sage, passionfruit and lime, with flavours similarly set, spiked with exotic spice and finishing with briny freshness. Wonderfully made wine here. Beautiful drinking.
