The second white from Charlotte and Louis Perot, this time a mix of chenin blanc, mauzac and loin de l'oeil. The latter pair are fermented and aged together in stainless steel vats, whereas the chenin is done in old oak. When you open this, give it a chance to breathe and you'll be rewarded. There is plenty of cooked apple and white flowers, plus a sultry lick of honey (without the sweetness). Never fear, it's not a heavy weight - thanks to a dart of mineral acid that keeps things feeling good. Perfect with long lunches, share this with the Aries in your life.
