Travis Tausend opened Adelaide's first natural wine bar/enoteca but found himself drawn into the world of winemaking on his doorstep in Adelaide Hills. He learned his craft through study, travel and vocational experience in wineries, locally and overseas, before establishing his eponymous wine project and running at the winemaking world full tilt. All his fruit is farmed organically, all wines are no additives, including zero sulphur. While his wines are often bright and playful, they also show a depth and detail that make them compelling. This one is a no oak chardonnay, crisp, tense, saline and minerally, so very refreshing but with just enough savoury nuttiness to take this to the next level. Such a delight.
