This was an experimental wine and a successful one in fact we are so happy with this we are making it our premium white wine. The aim was to make a wine that maintained its fruit qualities and exhibited some ‘fino’ characters. It is low production and unique.
High quality chenin blanc from a gingin vineyard was fermented and then clarified in a way that preserved its bright fruit characters. It was filled to 5-year-old burgundy barriques on ullage and a yeast ‘flor’ allowed to develop over the wine. This is important as the wine beneath the ‘flor’ is then protected from air. It ages in a warm cellar for in excess of 14 months, concentrates and takes on ‘flor’ derived characters.
There is no wine quite like this one in australia. Bright, fresh green apple and preserved lemon, a delicate creamy palate with sea spray and oyster like characters, finishes tight and tart. Should be served chilled. - Vino Volta
