The idea came naturally due to the very low yields of recent vintages. Jean and his sister Anne have called on fellow winemakers who have the same values when it comes to farming. This is a savagnin blend of Château Chalon, savagnin, viognier, picpoul, clairette, grenache and riesling. Natural vinification, maceration for certain grape varieties, under 'veil' for others, a blend of several vintages, zero sulfur, unfiltered or fined.
Smells like complex notes of citrus fruits, yellow fruits, florals on the palate with a deep richness - but it's also bloody fresh, with sparkling minerality, and fruit to round it out. YES YES YES.
