Andy Ainsworth cut his teeth working in top flight bars with a natural wine bent. He's done his time travelling the globe looking at wine culture and immersing himself in the work of wineries. Ipso, with a move to regional Victoria, he was drawn into the idea of having a crack at the craft himself. This wine is inspired by Andy's delight in producers like Clos Cibonne, Chateau Simone and Tour du Bon - distinct rose wines emerge from these winemakers, with oxidative characters a feature.
This is 100% cabernet sauvignon sourced from the famed Shay's Flat section of the organic Chapoutier Vineyard in Pyrenees, Victoria. The fruit is soaked overnight and pressed to old barrels, and in its last months left un-topped to enhance the gentle savoury, oxidative characters we find in the wine. It's a complex rose, maybe a very light red, red fruited, herbal, gently spice and nutty with saline mineral notes shot through. Superb. Delicious. Invigorating. Stunning debut stuff.
