A lot of whole bunch goes into making this wine, indeed, 100%. Mix of wood to mature. The organic certified site in Pyrenees does the majority of work.
Very minerally, quite gamey, really herbal, very rich but not big and bold, just a lot to sink one’s teeth into. It feels quite obvious, unctuous, palate staining, cloying to an extent, breathy spice finishes things, and missing a bit of refreshment factor, but then again, do you need that from a wine teetering into winter-warmer spaces. Fine. It feels sloshy and inky, a little wanting for tannin profile to give boundaries, but a quibble in a way, a drinkability for sure. A wine that shape shifts and moves in mysterious ways, and perhaps I’d be more in the zone of a glass or two, over a bottle. - The Wine Front
