Ex-chef, NOMA alumni, Danish ex-pat; Anders now makes wine with his family in the Ardèche. His wines have developed a cult-following for their honest expression of this part of the world, where vineyards have been tended organically for decades.
This is a pet-nat made from 50% apples and 50% grapes. You could call it a mutant, if it wasn't so pretty and peachy. Cider on the nose, wine on the palate.
Biodynamic apples come from a farm near Valvignères and the grapes are mostly merlot and cabernet sauvignon from Domaine du Mazel (also bio). After the apples were harvested, the fruits were co-fermented. Bottled with 15 grams of RS, once fermentation was finished in bottle, they were disgorged in February. - High Hopes Wines Co.
