From a single orchard on a plateau, made up of clay and a lot of silex/flint. First ferment occurs in stainless steel tanks with natural yeasts. The juice remains there for 4-5 months and is occasionally racked. There is a very light filtration before bottling. The secondary ferment occurs in bottle, where the cidre also ages for a further 5 months. No disgorgement. 30ppm SO2.
Beautiful colour – very clear. Delicate perfumes, honey drops, apples, flowers. Quite crisp and fresh and super lightweight. You get the sandy mineral influence on the finish. More refined, very easy and delicious. Lingering minerality. Tiny bubbles. Gentle. Miniscule bubbles. Honey, mandarin, florals, blood oranges. More finesse. Very tasty. Mid palate is light but that’s the style and it works. The type of cidre you want to drink over and over again. - Ryan Larkin Importer
