Archie Rose Dry Grown Rye Malt Whisky Harvest 2019

A truly original whisky here form Archie Rose, working with the Whytcross family in Barellan NSW who where severely affected by drought, they set out to make a whisky from as many drought-tolerant grain varieties as possible. Along with using varieties of Black Ethiopian Barley, Purple Tibetan Barley and heirloom rye, all dry irrigated (hence the name Dry Grown), they throw in some raw grain from the field to allow for spontaneous fermentation.

A complex layered whisky here, we are seeing toasted rye, poached apricots, roasted almonds combined with lifted notes of candied orange and honeycomb.
