Delicious sparkling wine, crunchy in texture, lemony and zesty with a light vanilla cream and halva character running through the wine. Lots of perfume, nice bit of gingery spice to sniff on in the green apple, citrus and vanilla things going on, the bead is vigorous and refreshing, the finish lingers with saline minerally character and a lick of nuttiness. An absolute delight here.
It goes wild ferment, bottled unfined, unfiltered, with no additions, hands out on lees for eight months then gets disgorged and rested pre release. The ‘Farmer’s Fizz’ feels evocative but this is a step up. - The Wine Front
