Brendan Cato is a chef, pretty much, though his enthusiasm for wine has had him working alongside Erinn Klein at Ngeringa in the Adelaide Hills for the past few harvests. Brendan and Erinn met at the fabled Rootstock Sydney festivals and hit it off - the friendship and exchange has resulted in Brendan working out winemaking and producing 'Carto' wines.
Brendan sources fruit from happy/organic farmed vines in western New South Wales. This is semillon, fermented on its skins, an orange wine by nature, a wild white drink by another name. It's heady in preserved lemon scents, shows salty-mineral character, chewy texture and generally is just damn cool, interesting, great drinking. Another version of adult lemonade but bone dry. Wicked.
