The second white from Charlotte and Louis Perot, this time a mix of chenin blanc, mauzac and loin de l'oeil. The latter pair are fermented and aged together in stainless steel vats, whereas the chenin is done in old oak. When you open this, give it a chance to breathe and you'll be rewarded. There is plenty of cooked apple and white flowers, plus a sultry lick of honey (without the sweetness).
