Named for co-owner Topher and his wife's first daughter, St Florence is an Australian Wild Ale re-fermented with Semillon grapes hand harvested from Tyrrell's Estate in Pokolbin NSW. The grapes were chilled overnight before whole bunches were thrown in a stainless steel vat and sealed for fermentation. After three weeks, the juice at the bottom of the ferment was removed and 2 barrels of Golden ale was added and allowed to macerate for 4 more months when another two barrels were added. Resting for 11 weeks in bottle before release this little gal is ready to drink!
On opening, the aroma is reminiscent of aged Semillon with golden honey notes, waxed lemon and pear skin. The colour and palate show the months on skins with a deep yellow colour and nutty, grippy flavours which open up as the beer warms with a savoury finish. It is one of our finest examples of blending in fruit whilst firmly maintaining the integrity of our beer. It’s effortless and the ability to see both the beer and wine separately but also coherently on the palate is its strength - Topher Boehm
