What an amazing example of the exquisite wines coming out of Georgia. This collaboration between two friends, Giorgi Tsirghvava and Mamuka Tsiklauri, started back in 2014 and is getting better every vintage. Staying true to the traditional Georgian way of making wine, this long macerated Khikhvi is aged in traditional qvevri buried underground.
This wine is perfumed, like an intertwined spice and flower market, with an earthly undertone to provide shape and depth on the palate. The acidity and tannins complement each other, resulting in a striking musk-like finish. Pairing this with either lighter meats or a cheese board - you cannot go astray.
