For more than 30 years, Domaine des Sablonettes has been producing outstanding wines from Coteaux du Layon of Loire Valley. They are dedicated biodynamic farmers, gently work grapes into bottle with wild fermentation, zero additions and no filtering/fining as a motif. This chenin blanc comes from 40 - 45 year old vines grown on schist. The grapes are harvested from several parcels in Rablay where the botrytis (a.k.a noble rot) has spread. The thick juice is fermented and aged in tank, then kept at a cool two degrees for a week before bottling in the spring. 140g residual sugar with out of this world acidity to keep it ultra fresh.
