A former champion of the French fencing team, Jean-Baptiste Semmartin turned to winemaking in 2005. Training first in Bordeaux, he found the green path while working for Emmanuel Giboulot in Burgundy. From then on out it was biodynamics only for Jean-Baptiste. The three wines of Domaine Lajibe reflect its three plots of vines in the foothills of the Pyrenees.
Haure is a hand-tended 100-year-old vineyard, both organic and biodynamic certified. Planted with gros manseng, petit manseng, petit courbu and the super rare claverie. The wine is aged for two years in old large oak before being bottled with a pine rosin wax seal. BAM! One sniff or sip of this and it's obvious why this has ultra-cult status in Europe. It's pure and engaging from the outset. Chiselled with a nice acid line. Think zinging and aromatic vibes. There is verbena, mint and a certain nuttiness too. So many layers to this mille-feuille of a wine.
