Vin Jaune is magical stuff - the yellow wines of Jura are totally unique, amazing, long-lived, seriously wonderful to drink. When it's made in the village of Chateau Chalon, it takes on that name (Chateau Chalon), but is still made in the same way - savagnin juice rests under a yeast flor for six and a half years before bottling. All that fino-like saline character, all the nuttiness, all the bristling acidity. Just so good. This is one of Jura's stand out producers for the style. No misses.
