"Naturé" is the old school name of savagnin. Domaine Ratte's naturé is planted on soil of blue and gray marl, the vines are 60+ years old, the grapes are harvested entirely by hand late and entirely in order to express the most 'character'. It's 50/50 de-stemmed and whole bunch, with a very slow and delicate pressing into stainless followed by old oak, natural fermentation and bottling without filtration. What's in the glass ? A wine of elegance and grace, lean and slippery with mineral and oxidativiness - everything you'd want from the Jura and more.
