Our mate, the brilliant winemaker Peter ‘Dredgey/Dr Edge’ Dredge, decided to do a limited run of no SO2 wines and we got some of it. Mostly these wines (this, a pinot noir, a pet nat) stayed in Tasmania for his local customers, but we stretched the friendship and landed some for P&V. Damn, the wines are so good. The fruit comes from ‘down south’ of down south in Tasmania, featuring in-conversion to organic parcels from Dredgey’s vineyard resource. The wine here is vibrant, sleek and chalky-textured, lit up with cherry juice, rose hip tea characters, loads of wild herb and pepper, a kind of sarsaparilla edge. It does wildness and elegance hand-in-hand. It’s so fresh and so gosh damn good to drink. Unique.
