Eden valley blend of riesling (67%) and gewürztraminer. 60 dozen only. Some skin contact, basket pressed, gravity racked, fermented naturally and matured in 4-year-old oak. Gewurztrainer vines (at Springton East) are 20 years old; riesling vines (Springton North) are 80 years old.
Tart, textural, tasty and tense. This tastes of lime and sour snakes, lime leaves and rose oil. It has a sorbet-like character. It pushes the boundaries and does so successfully, though it’s highly likely to polarise. It needs food and it needs it now.
