Baby Vin Jaune baby!
The charismatic Eric Goypieron is producing wine within the Jura region but outside the strict Jura appellation. Here he has employed the oxidative and "sous voile" techniques used in the region's famous Vin Jaune. A declassified Vin Jaune if you will. Eric's baby version of the style.
The palate is rich in apple crumble and warm spices without being cloying. There's the familiar nutty savouriness, a good sting of acidity, olive brine and citrus pith.
Engaging and very, very delicious.
